Bagel Casserole

Ingredients
3 bagels
4 eggs
4 slices of bacon, cooked
1 red pepper, diced
50g cheddar cheese, grated
Salt and pepper to taste
Method
Step 1
Preheat the oven to 200 degrees celsius and lightly grease a casserole dish.
Step 2
Cut the bagels into bite-sized chunks and spread them across the casserole dish.
Step 3
Add the bacon, peppers and cheese to the casserole dish and combine.
Step 4
In a bowl, whisk the eggs with salt and pepper and pour over the bagel mix.
Step 5
Cover the dish with tin foil and bake for 20 minutes. After this time, remove the foil and bake for a further 20 minutes, or until golden.
