Beef and Vegetable Stir Fry

Ingredients
200g beef strips
1/2 red pepper, sliced
1/2 green pepper, sliced
1/2 onion, sliced
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon olive oil
Cooked rice or quinoa, to serve
Fresh coriander leaves (for garnish, optional)
Method
Step 1
Heat olive oil in a pan or wok over high heat.
Step 2
Add beef strips and stir-fry until browned.
Step 3
Add sliced peppers and onion, stir-fry for another 2-3 minutes.
Step 4
Pour in soy sauce, stir well to combine.
Step 5
Cook for another minute until vegetables are tender-crisp.
Step 6
Serve over cooked rice or quinoa.
Step 7
Garnish with fresh coriander leaves if desired.
