Chickpea Salad Sandwich

Ingredients
200g canned chickpeas, drained and rinsed
1 celery stalk, finely chopped
1/4 red onion, finely chopped
1 tablespoon vegan mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon curry powder
Salt and pepper to taste
4 slices wholemeal bread
Lettuce leaves and tomato slices for serving
Method
Step 1
In a bowl, mash chickpeas with a fork.
Step 2
Stir in celery, red onion, vegan mayonnaise, Dijon mustard, curry powder, salt, and pepper.
Step 3
Toast the bread slices if desired.
Step 4
Divide chickpea mixture onto two bread slices.
Step 5
Top with lettuce leaves, tomato slices, and remaining bread slices.
Step 6
Slice in half and serve.
