Creamy Chicken with Pasta and Broccoli

Ingredients

2 chicken breasts

2 tbsp red pesto

2 tbsp creme fraiche

1 tbsp olive oil

150g pasta (such as penne or fusilli)

150g broccoli florets

Method

Step 1

Heat the olive oil in a frying pan over medium heat. Add the chicken breasts and cook for 3-4 minutes on each side until golden brown.

Step 2

Season the chicken breasts with salt and pepper and continue cooking for another 14 minutes until cooked through, turning occasionally.

Step 3

Reduce the heat to low and stir in the creme fraiche and red pesto until well combined.

Step 4

While the chicken is cooking, cook the pasta according to package instructions. In the last 5 minutes of cooking, add the broccoli florets to the boiling pasta water.

Step 5

Drain the pasta and broccoli, reserving a little pasta water.

Step 6

Slice the cooked chicken breasts into chunks and add them back to the pan with the creamy sauce.

Step 7

Add the cooked pasta and broccoli to the pan and toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce. Serve and enjoy!
