Fish Tacos with Mango Salsa

Ingredients
4 white fish fillets (such as cod or tilapia), about 150g each
8 small corn tortillas
1 ripe mango, diced
1/2 red onion, finely chopped
1/2 red pepper, diced
Juice of 1 lime
Salt and pepper to taste
2 tbsp olive oil
Method
Step 1
In a bowl, combine diced mango, red onion, red pepper, lime juice, salt, and pepper to make the mango salsa. Set aside.
Step 2
Heat olive oil in a large frying pan over medium-high heat. Season fish fillets with salt and pepper, then cook for 3-4 minutes on each side, or until cooked through.
Step 3
Warm the corn tortillas under a grill or microwave.
Step 4
To assemble the tacos, place a portion of cooked fish on each tortilla, and top with mango salsa.
Step 5
Serve immediately, optionally with additional lime wedges and hot sauce on the side.
