Grilled Pesto Halloumi Skewers

Ingredients

250g halloumi cheese, cut into cubes

1 pepper, cut into chunks

1 courgette, sliced

8 cherry tomatoes

4 tbsp pesto sauce

Wooden skewers, soaked in water for 30 minutes

Method

Step 1

Preheat the grill to medium high heat.

Step 2

Thread halloumi cubes, pepper chunks, courgette slices, and cherry tomatoes onto skewers, alternating the ingredients.

Step 3

Brush skewers with pesto sauce.

Step 4

Grill skewers for 3-4 minutes per side, or until the halloumi is golden and vegetables are tender.

Step 5

Serve hot.
