Honey Mustard Glazed Salmon with Roasted Potatoes

Ingredients
2 salmon fillets
30ml honey
15ml wholegrain mustard
15ml olive oil
1 teaspoon garlic powder
400g baby potatoes, halved
Salt and pepper to taste
Fresh herbs, chopped (for garnish)
Method
Step 1
Preheat the oven to 200°C (400°F).
Step 2
In a bowl, mix honey, wholegrain mustard, olive oil, garlic powder, salt, and pepper.
Step 3
Place salmon fillets on a lined baking tray.
Step 4
Brush honey mustard mixture over the salmon.
Step 5
Toss halved baby potatoes in the remaining mixture.
Step 6
Arrange potatoes around the salmon on the tray.
Step 7
Roast for 15-20 minutes, or until salmon is cooked through and potatoes are golden.
Step 8
Garnish with fresh herbs before serving.
