Lemon Herb Chicken with Roasted Vegetables

Ingredients
2 chicken breasts
Zest and juice of 1 lemon
2 cloves garlic, minced
15ml olive oil
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
300g mixed vegetables (eg, peppers, courgette, cherry tomatoes)
Method
Step 1
In a bowl, mix lemon zest, lemon juice, minced garlic, olive oil, thyme, paprika, salt, and pepper.
Step 2
Marinate chicken breasts in the mixture for at least 30 minutes.
Step 3
Preheat oven to 200°C (400°F).
Step 4
Place marinated chicken breasts on a baking tray.
Step 5
Arrange mixed vegetables around the chicken.
Step 6
Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
Step 7
Serve chicken with roasted vegetables.
