Lemon Herb Pork Chops with Mashed Sweet Potatoes

Ingredients

2 pork chops

Zest and juice of 1 lemon

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 cloves garlic, minced

400g sweet potatoes, peeled and cubed

15ml olive oil

Salt and pepper to taste

Method

Step 1

Preheat oven to 200°C (400°F).

Step 2

In a bowl, mix lemon zest, lemon juice, thyme, rosemary, minced garlic, salt, and pepper.

Step 3

Rub the mixture over pork chops.

Step 4

Place pork chops on a lined baking tray.

Step 5

Roast for 20-25 minutes, or until pork is cooked through.

Step 6

Meanwhile, boil sweet potatoes until tender.

Step 7

Drain and mash sweet potatoes with olive oil, salt, and pepper.

Step 8

Serve pork chops with mashed sweet potatoes.
