Mediterranean Stuffed Peppers

Ingredients
2 large peppers, halved and deseeded
120g cooked quinoa
60g cherry tomatoes, halved
60g feta cheese, crumbled
1/4 red onion, finely chopped
Handful of fresh basil leaves, chopped
5ml olive oil
Salt and pepper to taste
Method
Step 1
Preheat the oven to 180°C (350°F).
Step 2
In a bowl, combine cooked quinoa, cherry tomatoes, feta cheese, red onion, basil, olive oil, salt, and pepper.
Step 3
Spoon mixture into each pepper half.
Step 4
Place on a baking tray and bake for 20-25 minutes until peppers are tender.
Step 5
Serve hot, garnished with additional fresh basil if desired.
