Quorn Tikka Masala

Ingredients
300g Quorn pieces
1 onion, finely chopped
2 garlic cloves, minced
1 tbsp ginger, grated
200g canned chopped tomatoes
150ml coconut milk
2 tbsp tikka masala paste
240g brown rice
Salt and pepper to taste
Fresh coriander for garnish
Method
Step 1
Cook rice as per packet instructions.
Step 2
Heat some oil in a pan and sauté the onion, garlic, and ginger until softened.
Step 3
Add the Quorn pieces and cook until browned.
Step 4
Stir in the tikka masala paste and cook for another minute.
Step 5
Add the canned tomatoes and coconut milk. Simmer for 15-20 minutes until the sauce thickens.
Step 6
Season with salt and pepper to taste. Garnish with fresh coriander and serve with brown rice.
