Teriyaki Tofu Stir-Fry with Vegetables

Ingredients
200g firm tofu, cubed
1 red pepper, sliced
1 courgette, sliced
1 carrot, sliced
Handful of sugar snap peas
30ml teriyaki sauce
15ml soy sauce
5ml sesame oil
Cooked brown rice for serving
Spring onions, sliced for garnish
Sesame seeds for garnish
Method
Step 1
In a bowl, mix together teriyaki sauce, soy sauce, and sesame oil.
Step 2
Marinate tofu cubes in the mixture for 15-20 minutes.
Step 3
In a wok or large pan, stir-fry marinated tofu until golden.
Step 4
Add sliced pepper, courgette, carrot, and sugar snap peas.
Step 5
Stir-fry for 5-7 minutes until vegetables are tender-crisp.
Step 6
Serve over cooked brown rice.
Step 7
Garnish with sliced spring onions and sesame seeds.
