Thai Green Curry with Tofu

Ingredients
200g firm tofu, cubed
1 red pepper, sliced
1 courgette, sliced
1 onion, sliced
1 garlic clove, minced
1 tablespoon Thai green curry paste
400ml canned coconut milk
15ml soy sauce
5ml maple syrup
5ml lime juice
Handful of Thai basil leaves
Salt and pepper to taste
Cooked jasmine rice for serving
Method
Step 1
In a large pan, sauté tofu cubes until golden.
Step 2
Remove tofu from the pan and set aside.
Step 3
In the same pan, sauté onion and garlic until softened.
Step 4
Add Thai green curry paste and cook for 1 minute.
Step 5
Stir in sliced pepper and courgette, cook for a few minutes.
Step 6
Return tofu to the pan.
Step 7
Pour in coconut milk, soy sauce, maple syrup, lime juice, salt, and pepper.
Step 8
Simmer for 10-15 minutes until vegetables are tender.
Step 9
Stir in Thai basil leaves.
Step 10
Serve over cooked jasmine rice.
