Turkey and Veggie Lettuce Wraps

Ingredients

200g lean turkey mince

1/2 onion, finely diced

1 garlic clove, minced

1/2 red pepper, diced

1/2 yellow pepper, diced

1 carrot, grated

15ml soy sauce

5ml sesame oil

Iceberg lettuce leaves, for wrapping

Fresh coriander, chopped for garnish

Method

Step 1

In a large pan, cook turkey mince until browned.

Step 2

Add onion and garlic, sauté until fragrant.

Step 3

Stir in diced peppers and grated carrot, cook for a few minutes.

Step 4

Add soy sauce and sesame oil, stir to combine.

Step 5

Simmer for 5-7 minutes until vegetables are tender.

Step 6

Spoon mixture into lettuce leaves.

Step 7

Garnish with fresh coriander.

Step 8

Roll up and enjoy!
