Vegan Lentil Chilli

Ingredients
240g green lentils, cooked
400g canned chopped tomatoes
1 onion, finely chopped
2 garlic cloves, minced
1 red pepper, diced
1 yellow pepper, diced
1 carrot, diced
1 red chilli, finely chopped (optional)
5ml olive oil
15ml tomato purée
15ml chilli powder
5ml ground cumin
5ml smoked paprika
Salt and pepper to taste
Fresh coriander, chopped for garnish
Method
Step 1
In a large pot, sauté onion, garlic, and red chilli in olive oil until softened.
Step 2
Add diced peppers and carrot, cook for a few minutes.
Step 3
Stir in cooked lentils, chopped tomatoes, tomato purée, chilli powder, cumin, smoked paprika, salt, and pepper.
Step 4
Simmer for 20-25 minutes until flavours combine and chilli thickens.
Step 5
Serve hot, garnished with fresh coriander.
