Vegetarian Chilli with Quorn Mince

Ingredients
300g Quorn mince
1 onion, chopped
2 garlic cloves, minced
1 red pepper, diced
1 green pepper, diced
1 can (400g) kidney beans, drained and rinsed
1 can (400g) black beans, drained and rinsed
1 can (400g) chopped tomatoes
1 tbsp chilli powder
1 tsp cumin
Salt and pepper to taste
Fresh coriander for garnish
Method
Step 1
In a large pot, sauté the onion and garlic until softened.
Step 2
Add the Quorn mince and cook until browned.
Step 3
Stir in the peppers, kidney beans, black beans, chopped tomatoes, chilli powder, and cumin.
Step 4
Simmer for 20-25 minutes, stirring occasionally.
Step 5
Season with salt and pepper to taste. Garnish with fresh coriander before serving.
